Fridays with Julie - Homemade Salsa


Since I'm in GA this week visiting the fam, I was able to cook and spend time with friends and family.  Here is an easy and yummy recipe for homemade salsa.  I made this to accompany some delish tacos that I will post about next week.   Until then, enjoy this salsa on chips or with any Mexican dish.

Quick Salsa

Ingredients:
  • 1- 14 oz can diced tomatoes
  • 1- 10 oz can orginal Rotel
  • 1-6oz can tomato paste
  • 1/2 small onion, roughly chopped
  • 10 grape tomatoes, whole
  • 2 cloves garlic, peeled and smashed - or a teaspoon canned
  • 1/2-1 jalapeno, seeded or not (depends on how spicy you like it) - or 2 teaspoons cannned
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • small to medium size handful of cilantro, washed
  • juice of 1 lime - or 2 Tablespoons bottled

 Directions:
Put all the ingredients in the base of a food processor and combine for 30 seconds or until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste.  Put in refrigerator and let "rest" for 30 minutes to 1 hour.  Taste again and adjust seasoning if needed.  Enjoy!
