Who knew that Natalie (in Georgia) and I (in Virginia) were both craving Strawberry Cake?! After reading Natalie's recipe, I can't wait to try her cake that she made yesterday. However, for my post this week, I made Valentine Cupcakes for our Air Force Spouses Club Bunko Night.
I promised to be honest with you all when I take short cuts, so here it is...I used a box mix :( I know, I know, there are dyes and preservatives etc, etc, etc. No excuses, I used a box. I did however substitute the water for milk making my cake more moist.
Now, on the the recipe. This is my mom's strawberry frosting. She makes this cake for me every year for my birthday. Many of my friends have had it and love it too.
So without further ado, here is the recipe.
Debby's Strawberry Butter Cream Frosting (doubled)

- 2 sticks of butter - room temperature
- 2lbs powdered sugar (1 lg bag or 2 boxes)
- 3/4 cup frozen strawberries in juice (thawed)
Cream butter with electric mixer. Add Strawberries. Slowly add sugar. Mix until well blended. Refrigerate for 30 minutes before icing cupcakes or cake. Make sure cake is completely cooled.
I also added white/red chocolate hearts to make them more festive. Fresh strawberries also make a nice garnish.
