I hope everyone had a wonderful Easter last weekend. We had a great time celebrating with friends and our church family. We hosted a few friends for an Easter lunch and egg hunt for the kids. Why am I telling you all this? Well, because for the next 2 weeks, my recipes will include the left over ham of course! Aside from ham sandwiches, I made the quiche I'm going to share with you today. We had it for "brinner" - you know, breakfast for dinner, one of my favorite meals.
Ham, Cheese & Green Chile Quiche
Ingredients:
- 1 pre-made pie crust (yes if I were super mom I would have made my own)
- 5 eggs
- 2/3 cup milk
- 1 cup shredded cheese (I used monterey jack but cheddar or any other cheese would work well)
- 2 cups chopped ham
- 1 small can of chopped green chiles
- Salt & Pepper to taste
Directions:
- Preheat oven to 450 degrees.
- Place crust in ungreased 9-inch pie pan (I prefer glass)
- In a bowl, mix remaining 6 ingredients.
- Pour in pie crust.
- Bake for 10-15 minutes then cover the edge of the crust with foil.
- Continue baking for 30-45 minutes until it begins to brown and the center no longer "jiggles." I'm sure that there is a real baking term (perhaps it's when the center is firm) either way, you know what I mean.
- Let cool for 5-10 minutes before slicing.
