Fridays With Julie - Asparagus Roll Ups


This week I was able to get back in the kitchen a few times and finally make a new, yummy meal for my family.  My parents were visiting so I had help with my little man, plus I was able to rest and nap so I felt like cooking in the evenings.  My little girl that I'm growing is continuing to make me feel icky so please excuse my lack of Friday posts - only 14 more weeks to go!

All right, back to the food.  One of my favorite veggies is asparagus.  In fact, we ate it twice this week.  The first time we just roasted it in the oven, the second time I made the delicious roll ups.

My hubby was the photographer so there are a couple of shots with my baby belly too - so enjoy!

Asparagus Roll Ups

Ingredients:
  • 1 roll phyllo dough - thawed
  • 1/4 cup butter, melted
  • 1 bunch fresh asparagus
  • bacon - thin slices work best
  • provolone cheese
Directions:
  • Preheat oven to 375 degrees
  • Wash and snap ends off asparagus
  • Separate phyllo dough into sheets - I used 3 sheets per roll up and spread butter in between each layer
  • Cut sheets in half
  • Place 1/2 slice provolone cheese on phyllo dough
  • Take 4-5 asparagus spears and wrap in bacon
  • Place on top of cheese and dough
  • Roll up the bundles
  • Brush outside with butter and place seam side down on a pan
  • Bake for 12-15 minutes, until golden brown
Here are step-by-step pictures on my process.  Please note my FAVORITE kitchen tool - scissors.  These scissors are used for everything in my kitchen and are dishwasher safe.  We use them to cut up the toddler food and to do simple tasks.  I can't cook without kitchen shears!

 Wrap 4-5 spears in bacon 

 Place on cheese/dough

Roll up

 Place on pan to bake

  1. I am so having this for Easter dinner. I've already bought my fresh asparagus and phyllo dough. Oops! back to the store for provolone.
